I was reading the New Yorker magazine’s website today and found that they were promoting the release of a new movie called “Horseradish,” about a pair of old friends who reunite and set off on a culinary quest. One of the things that makes me very sad about the modern era is that horseradish is no longer available in the grocery stores. Horseradish root has been on sale in the United States since the late 1960s. This week, it disappeared for four years, and the reason was probably not the FDA but a shortage of horseradish root during the time the FDA was making its decision. This is a long-time problem that has been going on for a long time. I still remember growing up in the ’70s when we could only get horseradish that was very spicy, which meant we could only add it to a dish if we could eat spicy food in the same meal.

But now I can buy horseradish that is mild, so I decided to try it for myself, and I bought some at Whole Foods in San Francisco. First I peeled it and mashed it like you would potatoes. Then I tried adding it to eggs, using a little more than a teaspoon for one egg. I also added it to mashed potatoes, and although I found that it was mild, it did not add a great deal of flavor. I don’t think I would want to eat it on a regular basis.

I don’t know if this means I’m a hard case. But I like a little horseradish with my eggs, and if you put a big horseradish head in a jar with a lid on it, it will keep for a long time. That’s why, on occasion, I would take the horseradish from a jar that I didn’t need and use it on my potato salad. I had a jar of it at home for several years.

When I got married, my husband’s parents offered us some horseradish root, which we thought was very generous. Then he went on a diet and lost over 100 pounds. He had to cut back on calories, so he also cut back on horseradish. But he loves horseradish and I don’t blame him. I’m also glad that we now have some in the house.

So now, what do I do with all this horseradish? I made some horseradish potato salad. The recipe is available here on the Web site of Food Arts magazine. It is good. It was delicious. If you want horseradish that isn’t quite so hot, I suggest the recipe on page 25 of this week’s Food Arts.

What do I know? I am a dog person. But I do understand that the taste for horseradish varies, and some people like it very hot. So I thought I’d give the horseradish another try. The following recipe is for those who like horseradish a little spicy.

This time I used horseradish paste, because it is much easier to use and to spread than horseradish in its solid form. I also added some additional vinegar. I’ll tell you that I really enjoyed the horseradish. And I’m sure my husband did too. This time, I didn’t have any potatoes to make the salad.

I think the horseradish that I used was really mild, so next time I’m sure I will use a more assertive horseradish, like the one that comes in the jar in the picture.

The reason for adding vinegar is that, with the horseradish, you don’t get much flavor. And it’s a good idea to keep horseradish from drying out. I used about 3 tablespoons of the vinegar to 2 cups of water to get a little bit more flavor.

The following is my original recipe for potato salad:

My potato salad

4 to 5 medium red-skinned potatoes

1/4 cup (40 grams) mayonnaise

1/4 cup (20 grams) finely diced celery

2 tablespoons (25 grams) finely diced red onion

1 tablespoon (15 grams) prepared horseradish

1 tablespoon (15 grams) finely diced pickle

Salt and freshly ground black pepper to taste

Scrub the potatoes and cut into small dice (about 1/4 inch or less). Bring to a boil in a large pot of water and cook until tender. Drain. In a large bowl, whisk together the mayonnaise, celery, red onion, horseradish, and pickle. Add the potatoes and toss to coat. Season with salt and pepper to taste. Chill until ready to serve.
